From childhood, the familiar taste of pies with herbs and eggs that my mother prepared for us. The pies with herbs were a great success; the lush and tasty ones were snapped up by the children instantly. Fortunately, sorrel, green onions, dill, young beet leaves, and spinach always grew in the garden. Pies with greens were especially popular in the spring, when the greens are juicy with a crunch, and most importantly contain many vitamins and nutrients.

Today I made a selection of 5 recipes for green pies; they are quick to prepare and turn out very tasty.

Pies with herbs on kefir fried in a frying pan

This recipe is very common in rural areas of Ukraine and produces delicious pies.

We need:

  • 0.5 l kefir or yogurt
  • 2 eggs
  • 1 tsp baking soda (baking powder)
  • a pinch of salt
  • 1 tbsp. Sahara
  • 2 tbsp. vegetable oil
  • 4-5 tbsp. flour
  • 1 bunch of green onions
  • 1-2 bunches (300 g) of mixed greens (spinach, sorrel, young beet leaves, dill)
  • vegetable oil for frying

Preparation:

1. Wash the greens and onions well, dry them and chop them finely.

2. Prepare the kefir dough: sift the flour, pour 3 cups into a bowl, make a hole, add salt and soda, beat in the egg and pour in the kefir. Knead an elastic dough that does not stick to your hands. Adjust the consistency of the dough with the remaining flour. Let the dough rest for 20 minutes.

3.For the filling: mix chopped greens, add salt and beat in a raw egg, mix.


4. Divide the rested dough into 3 balls. Dust the surface of the table with flour and roll out the bun into a sausage, cut it into pieces 5 cm in size, and knead it into circles with your hands or a rolling pin. You can tear these balls from a lump of dough with your hands.


5. Place the filling on each flatbread, pinch it together, and lightly trample the pie.

6. Place the pies in a heated frying pan, seam side down and fry over medium heat until golden brown.


Pies with egg and onion with yeast in the oven

For pies made from yeast dough, both fresh and dry yeast are suitable. We will prepare straight yeast dough.


We need:

For the test:

  • 10 g dry yeast
  • 1 tsp salt
  • 1 tbsp. Sahara
  • 1 cup (230 ml) milk
  • 180 g butter
  • 4 cups flour

For filling:

  • 6 boiled eggs
  • 1 bunch of onion (100 g)
  • salt, pepper to taste
  • 2 tbsp. l vegetable oil

To grease the pies:

  • 1 raw egg

Preparation:

1.Let's do the dough first. Add yeast and sugar to the heated milk and stir until the yeast dissolves.


2. Add melted and cooled butter to the milk-yeast mixture.


3.Into this mixture, gradually add sifted flour and knead the dough.


Dust the surface with flour and knead into a soft, elastic dough that does not stick to your hands. Leave the lump of dough to rest for 20 minutes.


4. Let's start with the filling. Boiled eggs, cut into small cubes, and chop the onion. Mix eggs with onion, salt and pepper. To soften the filling, pour in 2 tbsp. vegetable oil and mix.


5. Form small balls from the dough, tearing off pieces with your hands.


Knead into flat cakes, this portion will make 20 flat cakes. In the middle of the flatbread, put about 1 tablespoon of the filling and pinch the edges.


6. Place the pies on a baking sheet covered with parchment, the distance between them is 1-2 cm; they increase in size during baking. Place seam side down. Before baking, brush with lightly beaten yolk.


7.Bake the pies for 20-25 minutes, at a temperature of 200 degrees, until golden brown.


Lazy pies with herbs and eggs in 10 minutes

Sometimes we don’t have enough time to tinker with the dough, sometimes we’re just lazy, so this recipe for making pies will come in handy, and our family will be grateful to us for this pastry.

We need:

  • 4 eggs, boiled
  • 1 bunch of green onions
  • 0.5 l kefir or yogurt
  • 1 tsp baking soda (baking powder)
  • 1 egg
  • salt, pepper to taste
  • 4 cups flour
  • vegetable oil for frying

Preparation:

1.Mix kefir with egg, soda and beat lightly.


2.Add salt and pepper to taste and gradually add flour, stirring. The dough should be similar to very thick sour cream.


3. Wash and chop the onion, add a little salt.

4. Chop the boiled eggs into cubes, but not too large. Add salt to the eggs as well.

5.Add eggs to the dough, and then onions and stir until smooth.


6. Fry the pies like regular pancakes, spoon them into a hot frying pan with butter.


Chinese patties with green onions and eggs

This recipe is suitable for those who want and love to tinker in the kitchen, and will receive not only pleasure from it, but also delicious pies.


We need: for 8 flatbreads

  • 1 bunch of green onions
  • 150 g flour
  • 3 eggs
  • 1 tsp salt
  • vegetable oil
  • 75 g water
  • pepper to taste

Preparation:

1.Knead the dough from sifted flour, salt and water. Wrap the dough in cling film and place it in the refrigerator for 20 minutes.

2. Prepare two fillings.

  • 1st filling: finely chop the green onion; Mix the eggs with salt and pepper and beat lightly. Mix eggs with onions.


  • 2nd filling: mix 75 g of flour with 1 tbsp. vegetable oil 3. From the finished dough, form 8 balls, roll out flat cakes from them.


3.Put a little of the 2nd filling on each flatbread and


pinch to form a bag, and then roll out into a flat cake with a diameter of 10-15 cm.

4. Each flatbread is fried on both sides in a frying pan heated with oil.


5. During the frying process, the cake seems to bifurcate, i.e. it turns out to be empty inside the cake. When we turn it over to the other side, we make a hole in the top layer of the flatbread and put filling 1 in it, with onions, distribute it inside the cake, continue to fry until the filling is ready, another 2-3 minutes.


This procedure is best done with a Chinese chopstick, if available, but a thick plastic straw can also be used.

6. The most important thing is to get used to putting the filling in the middle of the shortbread, and as a result, you get a shortbread with a delicious filling.

Dietary shortcakes with greens

The very name of this dish speaks for itself; it is a low-calorie dish, but very tasty.


We need:

For the test:

  • 300 g flour
  • 150 ml water
  • pinch of salt

For filling:

  • greens dill, spinach, green onions, parsley and lovage herb large bunch
  • vegetable oil
  • salt, pepper to taste

Preparation:

1. Mix all the ingredients for the dough. Wrap the dough in film and refrigerate for 30 minutes.


2. For the filling, finely chop the washed and dried greens, season with salt, pepper and add 1-2 tablespoons of vegetable oil, mix.


3. Roll out the finished dough into cakes 2-3 mm thick and cut out even flat cakes using a lid or plate.


4. Place the filling on the prepared flatbread and wrap it up.


Place in a dry and heated frying pan.


Fry for 1 minute on each side.


Each dish must be prepared with a good mood and love, then everything will work out, and your family will be grateful to you.

Before we start cooking, I want to tell you that there is an even lazier way. You can place the filling on a slightly rolled out piece of dough, then roll it up and bake it in the oven. But we will go a different way.

1. So, set the eggs to boil. Wash all the greens thoroughly and dry quickly (pat dry with paper towels). Chop the peeled eggs. Finely chop the greens, and grate the cheese into small shavings.

3. Roll out the dough a little, cut into squares the size of your palm (or so). Using the bottom of a glass, press down the center of each dough square. Transfer as much as will fit onto a baking sheet covered with paper. Spread out the filling. Place it exactly in the center.

4. Bake at high temperature 200-220 degrees for about 10 minutes.

  • instant dry yeast – 10 g;

We start by preparing the dough. Pour the sifted flour into a bowl. Make a small hole in it with your hands and pour milk and butter into it. Add dry yeast, salt and sugar. Knead the dough and put it in a warm place for an hour and a half. After about an hour, knead the dough. While the dough is rising, prepare the filling: boil the eggs, then put them in cold water and peel them. After that, cut them into cubes. Place them in a bowl, add chopped herbs and stir well. We knead the dough, roll it into sausages and cut it into pieces, making flat cakes. Place the filling in the center and make pies. Fry them until golden brown in hot oil.

Pies with eggs and herbs on kefir

Ingredients:

  • sifted wheat flour – 580 g;
  • kefir – 320 ml;
  • vegetable oil – 80 ml;
  • granulated sugar – 35 g;
  • selected egg – 1 pc.;
  • baking soda – 15 g.

For filling:

  • green onions - 5-7 feathers;
  • eggs – 8-10 pieces;
  • salt;
  • dill – 1 bunch;
  • sour cream – 40 g.

Preparation

Place baking soda in pre-sifted flour. Kefir and vegetable oil, stir until smooth. Grind the egg with sugar. Add about half the flour and mix well. A batter should come out. Then add the remaining flour and continue kneading. Since the dough comes out quite stiff, at the end of kneading, grease your hands with vegetable oil. Cover the dough with film and let rest.

Chop the boiled eggs, add herbs, sour cream for juiciness, salt, pepper and stir.

Roll out the rested dough and cut out circles. Place the filling on them and seal the edges. Fry the pieces until golden brown in well-heated oil. To make fried pies with eggs and herbs less greasy, place them on napkins or paper towels.

To fill the pies with egg and herbs, fill the rice with water with the addition of salt in a 1:2 ratio, add butter. Cook the rice until the water has completely evaporated under the lid. I really love these pies. The dough in them is superb, and the filling is very suitable, aromatic, and immediately smells like spring. In total you get 12 pies with eggs and herbs. They can be served with borscht, soup, broth, or simply delicious with milk. Also, if you don’t feel like making pies, you can bake one big pie!

So, for the dough, prepare wheat flour, sugar, yeast, milk, egg, vegetable oil, salt, water. For the filling, prepare eggs, green onions, dill, parsley, salt and pepper. To grease the pies, also take the yolk and a little milk. Hard boil the eggs, peel and cut into cubes. Wash and chop the greens, mix with eggs, add salt, ground pepper and mix. Form pies, putting a tablespoon of egg and herb filling into each. Place the pies, seam side down, on a baking sheet, brush with yolk mixed with milk.

Bake pies with eggs and herbs in the oven at 180 degrees for 25 to 30 minutes. When the pies are ready, transfer to a wire rack and cool completely.
